An aromatic nose is present in this Ginjo sake, characterized by the prominent notes of ripening banana, pear, and a hint of lychee. The palate is light and crisp, with a touch of sweetness balanced by a refreshing acidity due to the unpasteurized nama-sake. The profile is balanced and smooth due to the delicate flavors of white peach, melon, and a subtle hint of banana pudding. The finish has a smooth texture and a slight dryness. This Ginjo is well-suited for pairing with sushi, sashimi, or salads, such as shrimp cocktail, enhancing the umami flavors of the dishes.

One of the best culinary hot spots in Japan is Hokkaido, due to its abundant nature. You will be impressed by the variety of delicious local cuisine and culinary creativity.  Hokkaido has become a prime location for producing the high-quality rice, Kitashizuku, in recent years.

It is well-suited for cultivation in northern Japan due to its resilience in cold climates. With its large, uniform grains and low protein content, Kitashizuku is the perfect choice for producing sake that has a clean, smooth, and well-rounded flavor. The delicate aroma of Kitashizuku, combined with fruity and floral notes, makes it an ideal ingredient for producing high-quality ginjo and daiginjo sakes.
