This is a new sake brewed in 2024.
Limited Edition – 150 bottles available
Brewed in Hawai‘i with specialty Kitashizuku rice from Hokkaido. Plenty of flavor depth, with bright acidity and an elusive aroma like mountain apple. Made naturally, without pasteurization or filtering.
As the days go by, Koji converts the rice micro particles into sugar, which gradually sweetens this sake. Bottled without pasteurization for maximum freshness and delight. Medium-bodied, with a fine balance of sweetness and acidity for easy drinkability.
Goes with sautéed or grilled fish or chicken. Great with sashimi and sushi, pairing exceptionally well with uni.
Nama-zake(生酒)
Fresh, not heat-processed after production.
